The first Medieval Times opened in Orlando in 1983. If you don’t know about this whole experience, it’s a dinner where you watch jousting, swordsmanship and horse tricks, while you eat off silver platters and toast with goblets and chalices—chin, chin!

Arizona Bucket List No. 20 – Hoover Dam, Colorado River Kayak & Camping

As we drove in through the giant razor-wire lined gates, I became breathless at the views and to think not many people per year get to go into this restricted area! If you know a little history about the dam, you know it’s a feat of engineering, cost skywards to built and many lives were lost during the dangerous construction. At the bottom, we found ourselves face-to-face with the massive overflow spillways—giant tunnels that can channel trillions of gallons of water at speeds and with what force I don’t even want to imagine.
